The privileges of the Almochsen oxen: Culinary spring hike with star chef Herbert Hintner through lush green meadows

Hiking guide Andreas accompanies you on this hike through the awakening nature on the Malga di Villa Corvina in Val Casies. You will learn all about the fascinating mountain pastures, the rural life and the traditional animal husbandry of the oxen. After all, there is a reason why the Almochsen of Val Casies are in such high demand. Only in the spring, when the first flowers and aromatic herbs such as dandelion, sorrel, red clover or cinquefoil cover the lush green meadows, may the oxen head to the pastures. Star chef Herbert Hintner will then show you how this privilege improves the quality of the meat with the creations he serves at the Malga di Villa Corvina. The finest regional cuisine made with healthy local produce, refined with fresh spring herbs – a wonderful source of energy and a unique experience for the palate.

Herbert Hintner - star chef, born in 1957 in Val di Casies. He runs the “Zur Rose” restaurant in Appiano together with his wife Margot Rabensteiner. His traditional, creative and innovative cuisine was awarded a Michelin star in 1995 and Herbert Hintner attained recognition from national and international restaurant guides.

Fresh spring water bubbles up from the fountains in the castle garden, the intense fragrance of spring flowers accompanies you on this journey back in time.
